Ezee Gourmet - Protein Truffles (Romy's favorite mix)

I know I'm on the right track when I replace my addiction to chocolate with these home made 100% clean and mean, packed with goodness Protein Truffles. 

It took me quite a while and lots of mixing to find the right combination for protein bars or balls, or whatever shape you would like to make them into. For the simple reason, I don't really like dates and most of the recipes out there had them as a sweetener and a binding ingredient.

I'm sure you have seen more than one of these healthy, all natural protein bars on many different sites. I'm absolutely positive I'm not creating something new, but this is my all time favorite mix. Not only because they have natural cacao and feel so much like sinful treats, but because I've replaced all the sugar from the dates with pure water and drops of stevia. Sometimes I would add cranberries, goji berries or raisins, and even few spoons of natural honey. But that's entirely up to you...mix and match.

Protein Truffles (Romy's favorite mix)
Makes about 20 balls, depends on the size.

# 1 cup Oats
# 1/2 cup Protein Powder (I use Vanilla or Chocolate whey)
# 1/3 cup Ground Flax
# 3-5 Tbsp. Cacao (unsweetened)
# 1/2 cup Almond Meal (I use the "waste" from my home made almond milk) or Ground Almonds
# 1/2 cup Almond Butter or any other nut butter you like (for me it's the home made Almond or Cashew butter)
# 1/4-1/2 c. of water. You will adjust it depending on the mixture
# 1tsp. Vanilla Extract
# Dash or salt
# Stevia to taste. I like to add 1-2 spoons of Honey for taste as well:))

# Chia Seeds
# Coconut Butter

Mix all the dry ingredients well.
Add the soften butter, water, vanilla and the honey or agave if u are adding any. Add the water last so you can control how soft is the dough.

Once all the ingredients are well mixed form to small balls and roll into coconut flakes or cacao powder. Store in the fridge, in airtight box.

Be creative...If this is not your favorite mix, than add the ingredients you love.
