EZee Gourmet - Baked Crispy Chicken Tenders

Chicken Nuggets are not only one of most kids' favorites, but ours as well. But not the ones we get at the fast food chains, with hardly any lean chicken meat in. I'm talking about the home-made, crispy, lean and even good for you Baked Crispy Chicken Tenders, made from real chicken meat. 

I would gladly be a vegetarian, can't touch any uncooked meat. Not much of a cook as well. But I know a good meal when I see one. And this is a really healthy meal your kids will love to have for breakfast, lunch and dinner. I would usually garnish with Sweet Potato Baked Chips or toss on salad. 

Ingredients:
# Boneless and skinless chicken breasts
# 1/2 cup plain yogurt
# 1 cup cornflakes
# 1/2 cup ground flax
# 2 Tbsp Olive oil
# 1 tsp. salt
# 1 tsp. pepper
# 1 tsp. garlic powder (optional)

Instructions:
In a medium bowl, combine the yogurt with the salt, pepper and garlic powder and mix well. Cut the chicken breasts in small peaces approximately 8 if you want to make nuggets. Place the pieces in the bowl and cover them with the mixture. Cover the bowl and marinate at least 30 minutes.

Place the cornflakes in a freezer bag and crush on to smaller pieces. Add the ground flax and mix, by shaking the bag. Place the 2 tablespoons of olive oil in the bag of cornflakes and mix well to coat the cereal and flax pieces.

Preheat the oven to 400 degrees. Line a baking tray with parchment paper or foil.

When ready to bake, remove the chicken from the refrigerator and place into the freezer bag with the cornflakes. Close the bag and toss the chicken pieces around and gently press the cereal to coat the chicken.

Bake chicken nuggets for about 6 minutes, and then flip over on other side using tongs. Bake for another 6-9 minutes (for a total cooking time of 12 to 15 minutes) until golden brown, crisp, and cooked through.



Variation if you don't have the time to marinate the chicken



Replace the Plain Yogurt with egg whites, an added bonus for some extra protein. Combine the egg whites with the salt, pepper and garlic powder and mix well. Cut the chicken in small pieces and place in the bowl with the egg whites. Once the chicken is fully covered with the egg whites, place in the freezer bag with the cornflakes and flex. Shake the bag until the chicken pieces are completely coated with the cornflakes mixture.

Follow the above instructions for baking.  



This is an absolutely yummy and easy way to prepare your chicken nuggets without frying. You can add any other spices you like. I would add some Sesame and Parsley to mine next time.
